Mid-Week Meal Plan #3

It has been a crazy old week, with ill-health and leftovers being the order of the day.

This is what Mid-Week Meal Plan #3 looks like. I may not stick to it fastidiously, but it will help me plan my grocery shop. And it will most certainly help with the ultimate aim of cooking more, wasting less and saving money in the process.


The mid-week plan started off well. As expected, the stir-fried curly kale went down a treat with everyone going back for seconds. There were no leftovers.


We love pizzas, either when M makes them from scratch with his precious sour-dough culture, or when we pick them up from our local Sainsbury’s. Friday was a busy one, so shop-bought it was. We are partial to the vegetarian and the spicy jalapeno-pepperoni one and prefer them on a thin crust. No left-overs here either.

We met up with some friends on Saturday and decided to do a potluck dinner. I was in charge of the mac and cheese for the kids. The grown-ups ended up eating some deliciously spiced Indian street food (Vada Pav and Raj Kachori), all prepared by my incredibly talented friends. As with any good dinner party, there were plenty of leftovers that saw us through Sunday lunch and dinner.

The missal inevitably got pushed to Monday. I am renowned for overestimating quantities and always make enough missal to last a couple of days. This savoury delicacy is a particular favourite, so leftovers went down very well.

All well and good, as by mid-week, I was in the grips of the most debilitating cold. M kindly picked up some chicken nuggets and chips that got shoved into the oven come Wednesday mealtime. Not ideal, but desperate situations call for desperate measures.

All this means I still have a reasonably well-stocked fridge and plenty of things from last week’s mid-week meal plan that have moved over to this week.
