Mid-Week Meal Plan #2

So how did my first week of meal planning go? Not too bad, if I am being completely honest.

This is what Mid-Week Meal Plan #2 looks like. I may not stick to it fastidiously, but it will help me plan my grocery shop. And it will most certainly help with the ultimate aim of cooking more, wasting less and saving money in the process.

It all started off well with me making paneer parathas and stir-fried chicken noodles as per my mid-week schedule. I swapped the weekend menu around a bit, making the mushroom peas masala on Saturday and the veg chilli on Sunday. I overestimated my chilli ingredients, meaning we had left-overs on Monday.
This is not so bad if you think about it from my perspective. For someone who has started cooking from scratch more out of necessity than a love of the cooking process, a day off from the meal prep is a blessing. All it meant was that the menu got pushed forward by a day. So it was leek and potato soup with homemade sourdough bread on Tuesday.

It was now a question of either sambar or kale on the Wednesday. J insisted that he wanted to eat sambar with rice, which sort of settled the matter. The kale is still in the fridge, and will be turned into a dry curry in my mid-week meal plan #2.

There is an interesting by-product of this whole meal-planning process. I have a raft of cook books that I had acquired over the years and were languishing in a corner on the bookshelf. I am now using them to inspire my meal plans. Definitely beats the boredom of eating the same things week after week!
