Mid-Week Meal Plan #4

My mid-week meal plans seem to work best on weekdays. Take last week, for instance. I resolutely stuck to the meal plan through the week leading up to Saturday. The weekend was another story. We went out, met up with friends and ended up eating delicious pizza on Saturday and dosas on Sunday.

I am making a Mid-Week Meal Plan #4 that takes me through the rest of this week and to the middle of half-term. I am choosing a menu that involves minimal fresh ingredients, relying more on my store cupboard stock. That way, there is less chance of food waste should we decide to eat out or do a take-away instead.

The next few days pose an entirely different challenge. We are coming up to half term. Holidays mean all routines disintegrate and life assumes a leisurely pace. I have never planned meals during school holidays, cooking (or not cooking) on a whim. I must admit, this is not the best strategy. It has often left me rummaging through the fridge-freezer, scraping together a half-decent meal at the last minute  or doing a take-away instead. The new, health, budget and family-conscious me can no longer conform to this lifestyle.

So I am making a Mid-Week Meal Plan #4 that takes me through the rest of this week and to the middle of half-term. My 6 year old has insisted on eating the dal makhani leftover from Wednesday. I could have frozen it, but he has convinced me to include it on the meal plan for Thursday this week. 

So this is what Mid-Week Meal Plan #4 looks like.
