Banana and Nutella Muffins

My little blog is thriving. Just checked today and have crossed a 1000 page views! Not bad, considering I revived it not three weeks ago.

And no, it's not just M and me clicking away furiously to make up the numbers. I can't say the same about J though. What he gets up to on the i-pad when I am not watching is for him to know and for me to find out. Well, what better way to celebrate(!) than to make some banana and Nutella muffins.

Prerequisites to make said muffins:


1) at least 2 super ripe bananas that you would have binned had they not been salvaged by being baked into muffins

2) a hungry toddler who goes "kek, kek, kaaeeek," (that's " cake, cake,  caaaaake," for you and me) every time I so much as open the kitchen cabinet that houses my baking things

3) a blog that has just had a 1000 hits. (That's called self-indulgence, that).
You will also need
- 250 grams self-raising flour
- 150 grams granulated white sugar
- a pinch of salt
- 100 grams soft marg or melted unsalted butter (skip the pinch of salt if using salted butter)
- 2 eggs, lightly beaten
- a teaspoonful of vanilla extract (highly optional)
- the all important Nutella

Now most,  if not all professional chefs will cringe at what is to follow.  So if you are a professional chef look away now. If however, you, like me,  are unfazed by gloopy sloppiness, carry on reading.


Weigh up and bung together the flour, sugar and salt in a mixing bowl. Tip in the soft margarine, the beaten eggs,  the vanilla and the mashed bananas. Fold gently till the whole mixture becomes one big gloopy sloppy mess. The gloopier the better.

Line your muffin tray and spoon in the gloppy mix till the cases are about three quarters of the way full. 

Now the fun bit. Plop a blob of Nutella in the middle of each muffin.  How much will depend on how much you fancy your hazelnuts and chocolate.  Poke, prod, swirl the Nutella around the gooey muffin mix with a pointy instrument aka a knife.  Bake the muffins on the middle shelf of a pre-heated oven at 180 degrees for about 25-30 minutes.

Try and wait a few minutes to let the muffins cool before you tuck in.
